Nicole Holland, RD

Nicole Holland is a weight‑inclusive dietitian who specializes in eating disorders and sports nutrition, providing compassionate, affirming care rooted in the principles of Health at Every Size. She works with individuals experiencing anorexia nervosa, bulimia nervosa, ARFID, binge eating disorder, and malnutrition, approaching each patient as a whole person with unique experiences, identities, and strengths. Her passion lies in creating a safe, LGBTQ+‑inclusive space where patients feel seen, respected, and supported as they navigate recovery. 

Her philosophy centers on empathy, trust, and collaboration. Nicole leads with curiosity and connection, meeting patients exactly where they are and honoring their lived experiences as the foundation of care. She blends evidence‑based medical nutrition therapy with motivational interviewing and a weight‑inclusive framework, empowering individuals to make meaningful, sustainable changes at a pace that feels right for them. Her goal is always to support healing without judgment and to help patients build a healthier, more peaceful relationship with food and their bodies.

Nicole earned her Bachelor of Science in Exercise Science and Kinesiology from the University of Utah and her Master of Science in Applied Nutrition from the University of New England. She is currently pursuing her PhD at Utah State University, where her research explores the intersection of high‑demand religion and eating disorders within LGBTQ+ communities. Outside of work, she loves staying active with her blended family of six kids, adventuring outdoors through rock climbing, CrossFit, snowboarding, and hiking, and unwinding with music—whether playing guitar or working toward her dream of becoming a drumming master.
