Coby was born and raised in Southern Utah and has spent most of his life there, except for the time he served as a missionary in São Paulo, Brazil, for the Church of Jesus Christ of Latter-day Saints from 2009 to 2011. After getting married, he and his wife lived in Jacksonville, Florida, from 2017 to 2021. During their time in Jacksonville, his wife attended the University of North Florida, where she earned her doctorate in physical therapy in 2019. After graduating in 2020, the couple remained in the Jacksonville area for a year before accepting jobs back in Utah and returning home.
Coby enjoys spending time with his wife and daughter and also enjoys many outdoor activities, including swimming, biking, running, hiking, camping, fishing, and hunting.

He listened to my concerns about my blood pressure and retook it at the end of the visit and explained why it was better than at the beginning, (I have "white coat" syndrome) He also went over the rest of my concerns.
